At the Relais du Bastidou, René Thierry's cuisine recites the entire Gascon repertoire: duck foie gras, confit, duck breast and other crumbles. The chef also likes to work with seafood, scallops, langoustines and associates them readily with spices and other aromatic herbs. The dishes that are prepared for you are made from products selected from producers who respect high quality breeding, cultivation or manufacturing conditions. Some products are organic and almost all come from local productions. Their first supplier is their first neighbor: black pork meat and cured meats, veal under the mother ...
